Hi,
I have my SharePoint list and would like to use the form to create collections of data into a Gallery. The issue is the gallery is just blank.
However, when I create the input fields separately, the gallery shows the data fine. Not sure if I can even use a form connected to a SharePoint data source as a means of building a collection of data before I submit it.

Could you please share more details about your scenario? How did you use a form to create collections, use the form's Update property?
I create a test app and it is able to create a collection based on the form items connect to a SharePoint list:
