After choosing the user option in the "Send email with options", can that option get updated in the SharePoint list, which is a hidden field in the SharePoint form.
Assuming you mean literally setting a value or changing it or reading it, which you do not see in the Ux, but PA doesn't get fooled so easily :-) you can see it there.
