Hi
I'm quite the beginner to Power Apps/Automate and only have a year or so working with SharePoint Modern so i have quite a bit to learn. What i am having difficulty seeing is why PowerApps is so mobile/tablet-centric. The workforce I will be creating apps and automating processes for is very desktop computer-centric so creating apps for mobile or tablet isn't going to work for us, especially considering we already have other apps/automations (created by external developers) that are built for desktop.

Power Apps is a mobile first application but you can build PC browser based applications. You could just use the tablet layout as is or go into the Settings and change the screen size / orientation to meet your needs. with the new flexible containers you can build a responsive app that will look good on a PC, Tablet or Phone. @Shanescows recently did a couple of videos on how to use these new container. I recommend checking it out.
