I am attempting to create an app from a Sharepoint list - I did the initial steps - but I need more screens for added functionality. In one of those screens I need to add a button that the user clicks on when they complete the steps listed above and the button triggers an email. I created a new flow for that action - but I can't assign it to the button.
Any suggestions? I can provide screen shots - but I don't know which ones would be needed. Please advise.

Have you tried following the tutorial for inserting a Flow attached to a button available at https://docs.microsoft.com/en-us/powerapps/maker/canvas-apps/using-logic-flows#add-a-flow-to-an-app? Hopefully that will be able to resolve the issue for you.
Let us know if that doesn't work.
Yes, I've tried that... it doesn't recognize the flow I've already created - and when trying to recreate the same one -- I can't get all the options to work...

It looks like the Flow you created isn't a Flow designed for PowerApps. As seen in the the first section of that tutorial (https://docs.microsoft.com/en-us/powerapps/maker/canvas-apps/using-logic-flows#create-a-flow) the trigger on the Flow, for it to be called in PowerApps, needs to be PowerApps, not the SharePoint trigger.
You can still use your Flow as is but what you are looking for is instead how to submit your form to a SharePoint list, not how to trigger a Flow. If you've followed the instructions to connect to a SharePoint (https://docs.microsoft.com/en-us/powerapps/maker/canvas-apps/connections/connection-sharepoint-online) you will need to follow the instructions for how to update or create records in SharePoint, linked at the bottom of that page in the Next Steps section. There is also a good tutorial walking through how to update and create approval Flows using PowerApps in a multi-part series that starts at https://docs.microsoft.com/en-us/powerapps/maker/canvas-apps/sharepoint-scenario-approval-flow and flows into the Next Steps section where it connects the PowerApp to the SharePoint list to trigger the Flow.

how do I access the same triggers in the PowerApp flow vs the SharePoint flow?
when I attempted to do the Flow from the app - I could not access them...
