I'm trying to restore a previous version of an app I'm currently making. It is unpublished at the moment. I do see the various versions under the "version" column of the app detail. However, it does not have a restore function. It only has Publish this version. I don't want to publish yet, as it is still a work in progress. Is it possible to restore an unpublished app?

Restoring an unpublished version of an app is certainly possible. Restoring the app to a previous version will also not automatically publish the app to the latest version - so no worries.
The reason you are seeing 'Publish this version' is because you selected the latest (current) version of the application. You can only restore to previous versions - both unpublished or published ones (so not the one at the top - or Version 4 in the screenshot below):
In order to restore your app to a previous version, you will have to go back at least 1 version - in the example above version 3. Preferably you restore to the version where you expect that the app was stable.
