How many items can be in a choice/option set? This set will be associated with a choice column on a dataverse table

There is no official documented limit. I've heard some say 300, 500, and other values. That being said, if you're having to ask that question, I would advise to use a Table to store your options and create lookups to related tables that need to use this. Generally, beyond 20/30 items will often result in poor user experience.

Hope you don't mind a follow up question. Can you speak more to why the user experience would be different in using a table vs. a choice set? I would surface both in a dropdown list so I would think the experience would be the same.
A lookup will have a combo-box control where you can search for the record. With a regular dropdown list from an option set, a very large list would require lots of scrolling to get to the item you want. Additionally, if you ever need to get rid of an option in the future, it will cause a problem if there are existing/historical records referencing that option.
