Hi @PowerUser_One,
Is the record creation rule working for emails of known senders? Have you also looked under Settings > System Jobs to see if there is a job name that matches your record creation rule that ran? If so you should be able to dig into to see if it failed or perhaps it didn't run through all the steps due to a condition step that didn't pass.
