Once I publish an app, is there a way to make it private again? Or do I have to just export it and delete it to start a new un-published one again?
An app is published from the very first time you save it. In other words, if you make a fresh app and then save it...it is published.
If you Share it, then whatever the most recent publish is, will be the published app. SO, if you create a fresh app and save it and share it...it is published.
It is only after you have that first version in place that you get the option to publish any changes as a new published version.
If you publish (let's say) version 10 and you decide that you don't want that to be published, you can restore a prior version, let's say version 1 and then re-publish that. You can then restore version 10 and not publish so you can continue editing...but at that point version 1 is published.
So, to answer your question, there is no such thing as unpublish because the app is always published since version 1.
You can un-share an app though so that others no longer have access to it.
