I tried creating an App using one of my lists on SharePoint. On one of the fields, I needed to change the data being displayed from Department (default) to Assigned to. I click on the item, go to Advanced Options > click on Unlock Property changes. I changed the value from Department to Assigned to. The widget to lock back Property Changes is gone. I click on X instead to close the dialog box. Now, instead of seeing an eye, I get an X on the field I just changed.

I have deleted, re-did the process many times. I also tried doing over and over the app but still no results.

Frankly I have found Forms to be mostly useless for what I am doing, since the layout is rigid, and they have the issues you have encountered and others.

Particularly if you just want to display data, try just a Custom Gallery instead.  Much simpler and you add the text boxes freely and set the data to display also freely.

Please let me know if you need more details.

Hello - In order to change the mappings i.e. fields being displayed, you really don't need to go to Advanced and unlock. To change the field being displayed from "Department" to "Assigned To", just go to the Content pane and click on the "eye" corresponding to the field you want to remove so it gets crossed out and also on the one you want to add so it becomes visible.
