So, I've created a form, after witch you filled out, it's creats a task in MS planner.
That form are used by different people, but when the taks is created it shows that I created the task, because I am the owner of the flow. Question is, how I can change in the flow who creates the task ?

It is a default behavior for Microsoft Flow that the task will be created using the flow creator’s credentials, so the flow creator will be the one who creates the task.
I have seen a similar request on Flow Ideas Forum about this issue, please feel free vote and comment at here:

You can't change who creates the action with the default Planner Connector, as it runs under the account of the person who creates the Flow. This may be something that you can accomplish with Flow and the Planner API, but at this time it isn't available with the connector.
You can create a system/service account to create your Flows, but this is not a Microsoft best practice at this time. If this is functionality you would like to see added to Flow or a Flow Template, please consider submitting it to the Flow Ideas page, where it can be voted on by other users, and tracked and commented on by the Flow team.

I wonder if it is showing that you created the task because Flow is using your connection to Planner, not necessarily because you are the owner of the Flow.
Not certain if you can change the name of the person who created it, but you might be able to assign it to someone else. What's the intent or the end-result you're shooting for?
