Hello
I was hoping someone could help me please. I have a date picker on a booking form that people use to choose a Monday.
Is there a way to remove all of the other days out of the picker please, and only show Mondays?

There's no way to do this with the built in date picker unfortunately.
You could put this code in the OnChange property to set a variable which you can use to disable the submit if they didn't select a Monday:
UpdateContext({ DateIsMonday: Weekday(Self.SelectedDate,StartOfWeek.Monday) = 1});
Not what you asked, but one more option for allowing users to select a monday: you could use a formula to populate a dropdown with the next x Monday dates.
.... and here's the code for @Mike2500's suggestion, put this in your Dropdown.Items property to get the next 5 Monday's including today.
With({ NextMonday: DateAdd(Today(), (1 -Weekday( Today(), StartOfWeek.Monday))) }, ForAll( Sequence( 5, 0), DateAdd( NextMonday, Value*7) ) )
