My copilot trial is about to be expired and I am not sure what is the difference between the 2 licenses.
With the introduction of Microsoft Copilot Studio, the Power Virtual Agents license is being replaced with a new, Microsoft Copilot Studio one, this is the one you should get.
The Microsoft Copilot Studio license is also the one that lets you use generative AI capabilities, like generative answers.
The Power Platform licensing guide has been updated to reflect this:

So how can we assign the copilot studio license to a specific user in our organization>
You can do this per environment, in the Power Platform admin center, as documented below:
