Hi, how do I change sender email like "notreply@notreply.com" using connector Office365Outlook.SendEmailV2 ? Not using my personal email as sender in power apps.

The 4th parameter in the SendEmailV2 is the email address of the mailbox that the mail will be sent from. The one limitation is that it must be a mailbox and the person using the PowerApp must have Send As permission to that mailbox. For applications used by large numbers of users this is usually impractical. But that's the only way to change the address that the email comes from.
@Pstork1 please could you give an example of where the 4th parameter is entered into the SendEmailV2 string?
The 4th parameter is entered as a record. You can also use this record to add CC's BCCs, attachments, and a reply to address.
Office365Outlook.SendEmailV2("pstork@acmeman.com","Sample Email","This is the body of the email",{From:"noreply@acmeman.com"})
