In the PPAC, I noticed that you can change the email address of the application user:
This is an interesting capability that I never previously considered. Has anyone ever done this? It would be nice to be able to assign it the email address of a shared mailbox and be able to send email as an application user. It sounds intuitive and simple--but I wanted to ask around for any gotchas to this approach. Has anyone done this? Any gotchas to look out for?

The email here will be used if anyone sends an email to this user. To send emails from Dataverse / Power Apps you would need to be able to test and enable the mailbox for this service principal user. This would require the mailbox to be tied to a valid user in Exchange Online for the Test and Enable Mailbox to be successful. Based on this, not sure if your approach will work unless someone has a different idea here...
The approach below would work if you wanted to setup the mailbox and attach to a queue so when you send emails you send from the queue which is tied to the shared mailbox.
