I have enabled attachments on one of my tables and now can see Notes as a dataset that can be displayed. I am hoping to also get emails and phone calls to appear. I have created a 1-to-many relationship from this table to the email and phone call tables respectively, but they still don't show up as viable datasets to check/uncheck on the timeline component. Is there a setting I'm missing or some other trick to get this to work?

You don't need to create the relationships to the Phone Call and Email entities. You should be enabling the table in the Settings for Activities.
1. Click on Properties for your table
2. Click "Advanced Options" link to show advanced settings for the table
3. Choose the check box on the "Creating a new activity"
This will enable for Activities for the table and you will have the ability to configure which ones you show in your Timeline. https://learn.microsoft.com/en-us/power-apps/maker/model-driven-apps/set-up-timeline-control
