UK dates changing to US format

I have a bizarre issue. Today all date fields across all my power apps have changed from dd/mm/yyyy to mm/dd/yyyy (UK to US). But, when I launch https://make.powerapps.com/ and open each app they show in UK format (within the same browser - Edge). I republish the app, the problem goes away but just for the first launch. When I close the app and then reopen it the problem returns.

I've checked my browser settings on Edge and Chrome (all pointing to English UK), I've checked my Windows 10 regional settings, again all showing as UK - on the default Edge homepage they show as UK (on the news homepage). It only seems to affect Power Apps. Everything was working as of Monday 4th Jan.

I've attached some screenshots... can anyone help?

One my my Apps started doing the same thing. Whatever occurred has royally screwed this thing up - Even when I convert some dates from US to UK, I get a totally different date.

Still not found a viable repeatable solution to it.
