¿It's possible to add/edit a dynamics 365 CE Product Line Item to an opportunity in a PowerApp?. Our customer want to have a simplified app for the sales representatives with just the bare minimum Opp functionality, but including product line items.

Yes you can create a canvas app with just the fields you need, like currency, price list and then a subgrid/gallery of the select products.. You'll have to filter the gallery by currency and price list and for the update you'll have to Patch to Opportunity Product (opportunityproduct) entity which is the junction (N-N) entity between opportunities and products.
Have you had a look in just creating a new simple model-driven opportunity form with just the fields you need, including cleaning up the command bar/ribbon? You can associate that form to just the salesrep role so that the only form they see. It might be a simpler approach and better UX if you're users are currently working with model-driven apps.

Hi @chrissalazar, apologies for the late reply. Did you solve this finally? You can filter with an expression like this:
Filter(Product, Product = Gallery1.Selected)
