Up until very recently, the biggest difference was that the CoE Power BI reports were the only way to get a tenant wide view of apps and flows across all environments. Now the the Power Platform Admin Centre has released tenant wide analytics for Power Apps and Power Automate you can get a similar view from the Admin Centre

The main difference now is the the Admin Centre reports are limited in what they show - 3 reports compared to the CoE's 20+ reports. The advantage of the Admin Centre reports is that they show the last run time for Apps and Flows which the CoE doesn't do very well (as takes a bit to configure and has limitations).
The CoE reports also have report on additional things like desktop flows, custom connectors, virtual agents, environments etc.
My advice is to start with the admin centre reports and see if they give you the insights you are looking for. If they don't then take a look a the CoE reports CoE Power BI Dashboard - Power Platform | Microsoft Docs
