Hi - does anyone have any information on how the new multiple choice option for sharepoint lists works? e.g. can I us a checked listbox etc. It seems it is limited to a dropdown

I just tested with my SharePoint list that contains a multiple value choice column and it still won't work in PowerApps.
You could see from the below idea thread about Multiple value lookup Sharepoint, the status is still Planned.

So far this is still not supported, you could keep an eye on this thread. Once this is completed and supported, pg will announce there and mark the status to Completed.

You will see there is a new feature but it seems limited to dropdowns and not listboxes.
Very minimal inforamtion on it - I do have it working with dropdowns but it is not very user friendly and I was hoping I could find out what controls it can use etc. via documentation.

Multi-select fields can only be used with the Combobox control. Are you running into a particular limitation with that approach?
Yes - the approach of only fropdown boxes is limiting. Users cannot easily see the multiple selections they have made. I need to expand the size of the dropdown so all chosen options canbe seen which increases the size of the dropdown and it is quite ugly.
I would have thought the options would match the Sharepoint choice options - dropdown / radio buttons / checkbox (multiple choice).
I need this for a survey form and a dropdown simply does not show all options in an easy user friendly format.
Powerapps is in desparate need of better controls / containers.
Sorry that the current resolution on the multiple selection does not meet your requirement. I agree that if this could work on a radio/checkbox control, it would be much more user-friendly. Please consider to add your feedback on this feature in below idea thread:
