I can see the list of Bots in our company using Power Platform Admin View. This has the # conversations per day. As an admin, I would like to be able to see the Users who have engaged with the Bot. Is that possible/stored somewhere ?

No, this information is not available in either CoE Starter Kit or PPAC. Maybe if you open a support case they could have this information, but i am not sure.
