Hello,
Just wanted to confirm that Dataverse has no limitations when it comes to one-to-many relationships. I will have One main table (Employee Info) that will be the ONE side in the relationships and around 20 tables that will be the MANY side of the relationships. I will also have 5 table that will be connected to that One Main table (Employee Info) in a one-to-one relationships. Will I have any issues with this design?

I am not sure about limitations but 1 to N for 20 tables will not be an issue. In dynamics, 1-1 relationship will be created for same entity. Now in powerapps it is categorized under many to one relationship there is not explicit 1-1 relationship exists.
For example, case and business unit has 1-1 relationship between those entities. Once case/businessunit has parent record of the same entity.
