After uploading a document into the AI Forms Processing Model, the error states "Something happened, try again later." It was working until Friday afternoon, 10/22. Since then, it has been throwing the error.

Thank you for reporting this.
We are aware of an issue impacting the form processor control in canvas Power Apps, and a fix is on its way. Unfortunately it will still take a few weeks for the fix to be available across all regions.
As a mitigation, what you can do is remove any spaces that might be on the table column names. For example, if you defined a table column as ‘Part Number’, change it to ‘PartNumber’.
