What are the key differences between Canvas apps and Model-driven apps in Power Apps, and in what scenarios would you recommend using one over the other for building enterprise applications?

here is the main difference between both apps:

Key Aspect	Canvas Apps	Model-driven Apps
Design Focus	Design-first, full UI control	Data-first, layout auto-generated
Example App	Leave Request App – a mobile-friendly app for employees to submit leave requests	Employee Onboarding App – a structured enterprise process managing tasks and approvals
Best For	Custom UI, dashboards, mobile-friendly workflows	Enterprise processes, multi-user workflows
Data Sources	SharePoint, SQL, Dataverse, APIs	Dataverse (premium)
Licensing	Standard connectors do not require a premium license, unless needed for specific functionality.	Always premium. Per App or Per User license required

Recommendation
#1. Use Canvas apps for flexible, user-centric experiences.
#2. Use Model-driven apps for process-intensive, enterprise scenarios, large scale appplication.

Canvas App -

Is your UI is the primary consideration in the business deliverables then canvas app is the best choice.

If you are using sharepoint as datasource - powerapps basic license is fine, if using any premium datasource you need premium license.

Model-driven -

Is you application focused on the business centric process such as Purchase requisition then we can go with model driven app

The datasource is only relies on Dataverse so every user needs premium license.
