Title pretty much says it all. Why limit the modern buttons and icons to a limited set of icons? App makers are big kids now, and they should be trusted the responsibility to pick the appropriate icon at the very least from the readily available fluent icons, if not also custom icons with images/svg's. This only results in app makers either not using modern controls, using hacky methods to mimic them, or to not use icons because the current list is too limited and it would be weird to have icons for some elements, but not others.
Opening up icons to all fluent icons at least takes almost 0 development resources. Do it for the UI/UX folks Microsoft.
i think posting here will not change the strategy MS is following here. I dont think that anybody has an answer here to your topic.
maybe create a feature request and if many users like it they might look into this.
