I have a Public SharePoint site that i created for all visitors within the company
in this site i have a list and i want to give different permissions to this list
to make it blocked to the visitors and open for specific people that i choose

A very broad question - your Site and List Permissions manage this. What in particular are you having problems with?
the site is public i want every visitor in the company to have access to it ' and it is ok
but i have a list in the same site that i want to make it private (only the list)
You can use Stop Inheriting Permissions in List Settings > Permissions for this list and then set whatever you want on the list

I tried it before and insert users that i want but the result was that i blocked all users to the site and not only the list

You need this on the List Permissions, not the Site Permissions
