In my model driven apps, when Activity is enabled I could create an activity of Appointment, Email, Phone Call, and Task. But I cannot add a Post activity.
Any idea why and how to be able to use the Post Activity?
Yeah it should include Activity Feed entities like Post, but it makes for entities like Quotes, Orders, Cases to be more specific to Sales and/or Customer Service so I understand Microsoft's decision on that.
I actually created a few ideas to include more core functionality like Activity Feeds as part of CDS:
You can built it with custom functionality with a custom activity entity, and leverage Power Automate auto-create the posts. Or as you said with Notes if users do not use them. I would recommend with a custom activity in case notes are required in the future and notes a more restrictive in terms of customizations than custom entities.

I mean it is unfair. Model Driven Apps should have access to Entities such as Posts, Orders, Cases, Quotes etc for free while the access to Dynamics 365 Sales / Customer Service can remain paid. In thay case, it is up to the a model-driven apps developer to develop the usage of these entities they way he likes as in Account, Contact, Activity etc.
Don't you think so?
On the other hand, Do you think a Custom Post entity can work? or Can the Note entity be costumed? For instance, I hate that users see the Note Title and Description, can the title be hidden?

Unfortunately Activity Feed functionality is not enabled with only CDS. You'll need either Dynamics 365 Sales or Customer Service apps for it to be available.
