Will I experience problems if I have elements from different publishers in my Power Apps Solution? i.e. custom tables, custom columns...
I am not clear on what, if any, problems I may encounter down the line as I deploy those solutions into UAT and PROD environments.

I haven't actually tested that scenario, but it shouldn't be a problem. The Publisher of the solution doesn't have anything to do with the permissions assigned to the components. So I don't think it will cause an issue.
