Hi there.
Using the now() function is quite easy to configure a button to set current datetime in a variable.
But what to do when you have to set a variable with a different datetime value? I have some possibilities that I dislike:
1- use 3 textbox to write date, hour, minutes and concatenate them to a variable.
2- Write in a textbox the data in the correct format.
The way I like the most is to use a component in powerapps liek the "Date selector" with datetime, because it's easy and faster for the operator.
Is it possible?

A common combination is a datepicker control and two dropdown controls.
