I deleted an 'Associated View' on a custom table and now I realized that there is no way to create a new 'Associated View'. Is there a way to restore the view? I don't want to restore the entire environment.

Unfortunately, in Dataverse, there's no built-in functionality to directly restore a deleted view.
Instead try to create new New View --> Click Gear icon on the TOP --> Click Advance Settings --> Select Customization --> Customize the System --> Click Entities --> Select the Entity--> Select View --> Create a View.

That's interesting. It allowed me to delete a 'System View' but will not allow me to recreate the same. I tried creating a new view but that only allows creation of 'Public' Views not the view of type 'Associated View'.
At least there should be auditing on tables that hold dataverse metadata. I see that all view configurations are in the following table -
If only there was an option to restore the deleted record.
