I'm using a Sharepoint list as back-end for a Power App and I make use of a choice column. A few choices are predefined but the user can add more manually in the app.
What I was wondering, is there a sort of maximum number of choices which can be contained in the choice column from Sharepoint?

I have a list of countries in List-A, which may be updated / added time to time.
I need that countries to be available as a choice field or combo box in another List-B where people are allowed to add entry (with Customize Forms) with read only permission.
What is the way to fetch country column in List-B while adding an New entry (countries to be fetched from list-A)?

SharePoint doesn't impose a limitation on the number of choices, but Power Apps normally displays a Choice column as a dropdown. Dropdowns in Power Apps have a max of 500 entries. If you need more than that I would switch to a ComboBox and enable Searching for a value.
