I'm astounded that the only way for a PowerApp to write to a SP list is to grant permissions to each user. I am writing an HR system with delicate information stored so I obviously don't want the users to be able to 'read' the SP List. Can anyone provide me with a beginners guide to Dataverse and whether this would better suit my needs please?

But if you have to use SharePoint for Licensing purposes, check THIS VIDEO by Reza Dorrani as he explained how you can achieve this type of SharePoint List Security while using PowerApps.

Dataverse is going to allow you to setup security where you will be able to determine access to each record at the user, business unit, parent / child business unit, and organization level. You can control the access to the records with multiple levels of access as well including read, write, create, delete, share, and more. All of these permissions for each of the tables are controlled within roles that can be assigned at the team or user level.
