What is the reason I cannot choose "update Opportunity Product record" in a workflow process?
Is there any other way to update these records somehow? I know of plugins and power automate flows, but I would like to use workflows somehow...

Hello,
You can try building own custom workflow activity or action with plugin behind it to make it happen. I remember I created "Create" steps for opportunity/quote/invoice lines but I didn't go further. https://github.com/AndrewButenko/UltimateWorkflowToolkit/tree/master
