Does it make sense to use Microsoft's Conversational Virtual Agent inside of Power Virtual Agent? It feels like CLU would give a better understanding/processing, but I'm new to all of this.
If you are unsure, its best to stick with PVA NLU, which is designed to be simpler for a layperson new to NLU to use.
So I'm a full stack developer designing this thing. And I really care about the designing, the decoupling, in the best experience.
I feel like when software like this happens, it sacrifices quality for simplicity which has me a little nervous to use it.
Or if I want to use open AI GPT to determine the intent, I would really like to be able to do that as well.
So I'd really like to be able to decide what I use to determine the intent 🙁
With that in mind, we are looking into bringing CLU into PVA; stay tuned for updates in the coming weeks.

now that Copilot Studio is live, is it worth in terms of performance and understanding to create a CLU for the chatbot?

The Out of box NLU is great for most usage, but for customers with the desire or expertise to generate a custom model, CLU integration is now in GA for Copilot Studio:

You can use the free tier of CLU to try it out for yourself and see if it makes sense for your application to explore this avenue further.
