How to mark a field as not present

I'm extracting custom data from documents, to build a model. One field in particular may or may not be present on a document (a fee). How do I mark it in the tagging so that I can finish the model?

Thanks for reaching out.

During the tagging process, you can select a field as Not available in document or not available in collection
