I realised that the attachment part of the code clashes with the cc.

Do you want to send an email with cc and attachments?
You can use the following expression.
Office365Outlook.SendEmailV2( "timl@powerapps-guide.com", "Email Subject", "Email Body", { Cc:"", Attachments:Table( { Name:"", ContentBytes:"" } ) } )

Kyrie - I spent the day Googling how to send email with both an attachment and a Cc - yours was the only answer that worked. Thank you so much!
