Is it possible to stop someone who has global admin of a tenant from seeing data within a powerapp or do they automatically see everything added to the environment? As the owner of my tenant i want to not be able to see data that other people are adding to the app that is for their login.
There is no way to lock a global admin out of the data. You can disable their permission to the data, but they will always have the ability as a global admin to reset the permission so they can see the data.

It depends on the Data Source, but you can remove a Global Admin's permissions on some data sources. As a Global Admin they of course have the ability to re-set the permissions. At that point the only recourse is to turn on Auditing so you can see when that permission is re-established. But basically, if you don't trust your Global Admins you need to get new Global Admins.

What data source? Where is the data stored? The process would vary depending on the data. If you are the global admin then just don't go looking for the data and you won't see it.

It is possible to restrict by creating office 365 security groups and assign it to the powerApps Environment.
Only users added to this group will have access and others will not see the data in respective environment.

Of course as I mentioned the global admin can add themselves to any group that you create. You can restrict access temporarily, but there is no way to actually lock global admins out of anything. As global admins they can overcome any restriction that you impose.
