I am using Azure Blob to store different doc file types like (Excel, word, PDF, PNG/JPEG).
The main goal that I want to achieve is to allow users to preview any of the above-mentioned document types in a Power Apps canvas.
This functionality is very similar to several examples that I have seen using SharePoint:
I tried to apply the same concept but the only files that are being displayed in the PDF Viewer are only PDFs. As for the others, nothing is showing.
What will be the workaround to be able to preview documents in powerapps canvas that are stored in Azure Blob before downloading any file(s)?)?
I would appreciate it if you could provide an example.

It seems that requires a custom PCF component embedded in the canvas to show any document type from Azure Blob and achieve this kind of requirement.
I hope that Microsoft will provide Thumbnail property for Azure Blob.

The examples you gave are from a SharePoint Library (which comes with a Thumbnail property that Azure Blob does not provide AFAIK).
In the following article they explain how you can show the files stored in Azure Blob Storage in your PowerApp but no mention of Word nor Excel to display in PDF Viewer I'm afraid.
