I have created an app for my school to track progression in PE. (Which I am not happy with). It is not practical. Does anyone have any templates that cover this. Do I need to link this with excel? Please help!

It sounds like you would benefit from understanding the basics in database design and how it interfaces with PowerApps. Please check out my series on just that issue. https://powerusers.microsoft.com/t5/News-Announcements/Database-Design-Fundamentals-and-PowerApps-An-Overview/ba-p/184485 . Knowing how to design the tables that you will use is 90% of creating a successful app. There are templates and you would have to see if any of them apply to your requirements. Nevertheless, understanding the principles will help when you have to modify a template. From your make.powerapps.com page:
