I would like to customize the adaptive cards as i've already done with the suggested actions.
In the guide i find that it's possible to override only these property:

where can I change the entire UI?

We used to have Omnichannel connected with nDynamics365 Customer Service and I opened a thread on D365CS Community, but no lucky as the widget comes with no extra customization apart of the ones from the Dashboard.
Unfortunately, there is no way to customize in PVA to reflect on omnichannel as it uses its own widget for the chatwindow.

I'm assuming you need to customize the bot framework web chat client in order to render adaptive cards in a specific way. Have you checked these?
