When using PowerApps standard table(s) in a custom solution, what happens to the table, forms, views and/or data within the table(s) when Microsoft decides to upgrade their standard table, maybe add/delete field?

The only material impact will likely be the out of box forms if you are using them. The OOB forms will be merged with your changes and may need to be fixed up. One way to avoid this is to just create new forms whenever using system tables such as Contact or Account, as these will be untouched by an upgrade. More info here.
MS will not just delete fields or other changes that result in data loss. While very uncommon, they could "deprecate" some fields, which would at least give you an opportunity to move them to another field if need be.

To supplement on @ChrisPiasecki which is true what he mentions. All Microsoft changes are done via managed solutions, and every change you perform is done in the unmanaged layer which always sit on top of the managed layers. So all your changes (unmanaged layer) will take precedence. If you promote your changes with managed solutions, your managed layer will sit at a higher level (generally) then Microsoft's managed layer so will also take precedence. That said, it's pretty safe to use standard aka out-of-the-box tables and very recommended to do so not to re-invent the wheel and leverage lots of out-of-the-box capabilities, especially for user, contact and account.
