I might be completely over thinking this but we have multiple SharePoint lists that we are using to keep track of different projects. I have combined them into a Power App collection as they all have the same fields. The thing I'm struggling with is sending the information the field technician submits back to it's original SharePoint. The field techs could be working on multiple projects at once and I just want one app but when they submit I want to be able to patch the information back to it's original SharePoint list so it can update our data.

I have one initial question, why have you got multiple SharePoint lists, when you could have one with a Project field?

We would end up having THOUSANDS of items and I believe it would end up getting really messy if we did it that way.
SharePoint will accept up to 30 million records and I have several with over 50,000. It will be even messier having to do a new list for each project as you cannot dynamically connect or refer to list names - it would all have to be hard-coded. As long as the Project name is stored in a Single Line of Text and it is indexed in SharePoint, queries to it are Delegable, so you should be able to display whatever project you want.
