What can I use as a database to store the information inputted by users?
Is Sharepoint the only database that I can patch to?

There are many different connectors that you can use with Power Apps to save user data, including (but not limited to) SharePoint, SQL Server (both running in Azure and on premises), Common Data Service, PostgreSQL, Google Sheets, Excel files (stored in Dropbox or OneDrive), among many others. You can look at https://docs.microsoft.com/en-us/connectors/connector-reference/connector-reference-powerapps-connectors for a list of connectors supported by Power Apps. This list contains both table connectors (such as databases) and "API connectors".
