When editform is submitted to sharepoint list, incorrect date logged when using today()

I have an app that have edit forms that the user changes some yes/no values and submits them to the sharepoint list when a button is pressed. I have a hidden box on my edit forms for the title with the today() formula in them so the date in recorded. I have gotten complaints from people who use the app at night that the wrong date will be recorded on the sharepoint list and they have to manually change it. I have looked into the timezone settings for my app and under "language and time" there is no options for time. I am not sure what timezone my app thinks its in. When i put now() into a text box is shows the correct current time.

This issue only occurs on 2nd shift closer to midnight, so I am guessing the today() is only off by a few hours.

How can I dig deeper into this and fix it?

Hi @epicsmokey , The difference between both function is below:
The Now function returns the current date and time as a date/time value.
The Today function returns the current date as a date/time value. The time portion is midnight. Today has the same value throughout a day, from midnight today to midnight tomorrow.

Now, for the PowerApps Language and time setting you can check this way:
You also need to consider the Site setting for SP site:

This is my SP site settings. I am guessing that I can't see the regional settings option because i am not admin?

I think changing today() to now() will fix my issue. thank you for explaining the difference between the two.
