Problem saving Power Apps Form Field to a SharePoint List Choice Column set to Can add values manually

Using form in Power Apps to save/SubmitForm() to a SharePoint List.  One of the columns is a Choice with "None" set as the default.  The form choice items is configured to use Office365Users.SearchUser() . DisplayName

A button configured for SubmitForm() is saving the values correctly except for the Choice column which is saving as the default value.
