I have a canvas app that creates a collection on the Onstart function (when form is opened). I have placed a blank gallery on the canvas app and added a text input field and an icon. When I go to preview the app the gallery shows (I added a border to test) but the text input and icon will not appear. In the detail pane on the left the icon and text input are nested under the gallery. If I add a standard gallery with title and subtitle labels and preview it, those fields show up! Not sure what's going on here...

This is a common issue and is simple. you may have the field outside the gallery.
Click on the field or label then look to the left side and make sure the field is showing under the gallery if not cut and then paste it under the gallery then all should be good.
If I cut and paste the elements outside the gallery they appear at the top in the detail portion of the screen you're referencing and it won't be nested. Although at that point I can move the elements anywhere I want.
