I'm using Sharepoint as the backend for my powerapp.
Multiple teachers can use the powerapp to manage their own modules and results.
Issue is, for the powerapp to let them create records, they need "edit" access to the list in sharepoint, meaning they can also view and edit records which do not belong to them, when looking at sharepoint, despite the powerapp hiding that data from them.
Is there a good way to make sure only a site owner and the person creating the record can view and edit said record in a sharepoint list ? Can the permission be specified from within powerapp ?

It sounds like a SharePoint question, maybe you could try the following:
List Settings -> Advanced settings -> Item-level Permissions
