Firstly, our tracking in the power platform admin center > Resources > Capacity states that we have used 0 messages and 0 sessions. The copilot has been published and used over 100 sessions including some billed sessions.

On top of that, our limit in the power platform admin center > Resources > Capacity states that we have 0 message(s) remaining (even though we have used 0), and a nonzero number of session(s) remaining. I have seen the differences between a message and session, however everything that I see regarding usage limits for copilots is in terms of messages, not sessions. Why is this, and what could it mean in terms of our subscription?

Tracking Usage

Not sure why the Capacity report is showing no usage. Some possible reasons would be that the usage you report was last month and the report is showing current month. Or it may take time to update and just hasn't caught up yet. If neither of those are correct you probably need to open a support request in the Power Platform admin center with MS.

The reason it reports both messages and sessions is because Power Virtual Agent used to be licensed based on Sessions. MS switched over to licensing based on Messages around the time Copilot Studio was released. Messages is supposed to be an easier metric to understand than the sessions calculation used previously. That's why both show.
