    • A canvas App will give you the ability to create the full user interface for your application. An experience similar to creating forms in InfoPath.  You place interface elements on a canvas and then wire them up to display data.
    • A model driven app is more stylized and is based on data that is stored in the Common Data Service (CDS). You don't have the same level of control over the look of the user interface that you do in a canvas App.
    • The Power Apps portal is a web site that you can use to surface Apps as web pages.

I hope the above information will help you.

Hi you should see an overview of what each one does, writing a hole documentation here is no the best idea, take a look to official Docs https://docs.microsoft.com/en-us/powerapps/  hera a friendly overview  Power Apps Canvas vs Model Driven vs Portals Explained al credit to April Dunnam.

Onece you have a brief idea what they are then you'll decide which one fits your needs.

    My Thoughts

    use
Model Driven Apps: When you want to use Dataverse(Integrated relational data base builded for you),

PowerApps: When you want to leverage Dataverse o even other sources Like Sharepoint, SQL, Excel

Portals: for creating web forums, self service, knowledge base, or exposed to your customers(help desk).

    regards.
