According to the article below, Microsoft Teams integration is not supported on a Microsoft Dataverse environment:

Would be grateful if someone could explain whether this means you can't interact with any Dynamics 365 Field Service data/records inside of Teams? Many thanks!

You should be able to integrate Field Service with Teams for collaborating on records. Field Service is one of the Dynamics 365 Customer Engagement applications, see the details in the following two articles for the integration:

The Note in that article is a bit misleading as it is talking about an "only" Microsoft Dataverse environment vs. one of the apps it can integrate with, listed right above in the article you mentioned.

Teams can be integrated with Dynamics 365 Sales, Dynamics 365 Customer Service, Dynamics 365 Field Service, Dynamics 365 Marketing, and Dynamics 365 Project Service Automation.
