Is the AI the Form processor suitable for handling large invoice volumes?

If an Organization has hundreds or even thousands of vendors sending it invoices, which could be tens of thousands and probably different formats, would AI Form Processor be able to handle it? What afford would be required? It would be impossible and probably over the limit of the number of models that can be trained? Is there Power Automate / Azure solution for such a task?
